  Extreme Chicken Biryani

 Ingredients 


 Rice Soaking (Preparation) 


  • 4 cups rice (750g)
  • Water as required


 Rice Boiling (Preparation) 


  • 2 liter water
  • 1 star anise
  • 2-3 cinnamon sticks
  • 3 bay leaves
  • 1 & 1/2 tsp salt or to taste
  • 5-6 green cardamom
  • 4-5 green chilies
  • 1 & 1/2 tsp vinegar 
  • Strain soaked rice


 Tomato & Chilies Paste (Preparation) 


  • 2 large tomatoes cubes
  • 7-8 garlic
  • 2 inch piece ginger
  • 6-7 green chilies


 Spice Mix (Preparation) 


  • 1/2  tsp nutmeg & mace powder
  • 1 tsp fennel seeds crushed
  • 1/4 tsp clove powder


 Extreme Chicken Biryani (Preparation) 


  • 1/2 cup oil
  • 2 medium onion sliced
  • 1/2 tsp of black peppercorn
  • 6 or 7 cloves
  • 1 tsp of cumin seeds
  • Tomato and chilies paste
  • 1 tsp of red chili powder
  • 1/2 tsp of turmeric powder
  • 1 & 1/2 tsp of coriander powder
  • 1 tsp of hot spices powder
  • 3 tsp of salt or to taste
  • 3 tsp of lemon juice
  • 1/4 cup of fresh coriander
  • 750g of chicken
  • 7 or 8 dried plum
  • 1/2 cup of yogurt whisked



 Extreme Chicken Biryani layering (Preparation) 



  • 2 tsp of fried onions
  • 1 & 2 tsp of mint leaves
  • 1 & 2 tsp of fresh coriander leaves
  • Prepared spice mix
  • 1 & 2 tsp of fried onions
  • 1 & 2 tsp of mint leaves
  • 1 & 2 tsp of fresh coriander
  • Chicken Gravy
  • Boiled rice
  • 2 tsp of water
  • 1/2 tsp of kewra water
  • 1/4 tsp of yellow food color
  • 1 & 1/2 tsp of ghee



 Instructions 


  • For soaking the rice preparation, add almost four cups or 750 gram of rice, water as required in a bowl, wash thoroughly and soak for at least 30 minutes.
  • For boiling the rice, in a deep pot add two liter of water, one star anise, two or three cinnamon sticks, one bay leaves, one & half tsp of salt or to taste, five or six green cardamom, four or five green chilies, one & half tsp of vinegar mix well and bring it to boil, then add soaked rice in boil water, boil until third fourth done in almost ( 8-10 minutes), strain and set a side.
  • For tomato and chilies paste, in a mixture add almost two large piece of tomatoes in cubes, seven or eight garlic slices, two inch piece of garlic in cubes, six or seven green chilies chop mix well to make a paste and then set aside.
  • For spice mix, in a small bowl add half tsp of nutmeg & mace powder, one tsp of fennel seeds crushed, one fourth tsp of clove powder mix it well and set aside.
  • For extreme chicken biryani, first of all in a deep pot add almost half cup oil, two medium onion sliced fry it until light golden, then add half tsp of black peppercorn, six or seven cloves pieces, one tsp of cumin seeds and mix well, now add tomato and chilies paste, one tsp of red chili powder or to taste or as per your preferences, half tsp of turmeric powder, one and half tsp of coriander powder, one tsp of hot spices powder, three tsp of salt or to taste, three tsp of lemon juice in mixture and cook for just 2 to 3 minutes. Spread one forth cup of fresh coriander and again mix well, now add 750 gram of chicken and mix well until it changes color, then add seven or eight dried plum pieces, half cup of yogurt well whisked and cook for just 18 to 20 minutes or until oil separates, reserve half for layering.
  • For layering the extreme chicken biryani , in remaining mixture add two tsp of fried onions, one & two tsp of mint leaves, one & two tsp of fresh coriander leaves, add half quantity of prepared spice mix, add one third quantity of boiled until third forth done rice in mixture for layering, add one & two tsp of fried onions for layering, one & two tsp of mint leaves, one & two tsp of fresh coriander, add remaining spice mix, add reserved gravy, remaining boiled rice. Add two tsp of water in which add one and a half tsp of kewra water, one and fourth tsp of yellow food color and mix well, spread over rice and also spread one and half tsp of ghee on it then cover and steam cook on low flame for 12 to 15 minutes.
