 Chinese Crispy Salt & Pepper Wings

 Ingredients 


  • 750g chicken wings with skin
  • 1/2 tsp black pepper powder
  • 1 tsp or to taste salt
  • 1/2 tsp baking soda
  • 1 & 1/2 tsp garlic paste
  • 3/4 cup cornflour
  • 1/2 cup all-purpose flour
  • 1/2 tsp black pepper powder
  • 1/2 tsp chicken powder
  • 1/2 tsp or to taste salt
  • 1/2 tsp paprika powder
  • 1/2 tsp mustard powder (optional)
  • 1/4 tsp white pepper powder) 
  • 3/4 cup water
  • Cooking oil for frying
  • 1 tsp cooking oil
  • 1/2 tsp butter (optional)
  • 1/2 tsp garlic chopped
  • 1 medium onion sliced
  • 2 green chili
  • 2 red chili
  • Black pepper crushed to taste



 Instructions 


  • Grab a large bowl. Add the paste of garlic , baking soda, chicken wings, black pepper powder, and salt as per your tate . Mix all the ingredients, place a lid on it, and refrigerate for a minimum of two to four hours or overnight.
  • Grab another dish. Stir in cornflour, all-purpose flour, paprika powder, chicken powder, extra black pepper powder, and mustard powder, if using.Thoroughly mix in water to achieve a smooth consistency.
  • Drop and coat the marinated wings with the prepared flour mixture.

  • Pre heat cooking oil (140-150C) in a wok and fry the chicken wings on very medium heat for 4-5 minutes. Remove and let them rest for 4-5 minutes, then fry again on high heat until golden brown and crispy (3-4 minutes).
  • In the same wok, add cooking oil and butter. Let it melt.
  • Add garlic, onion, green chilli, and red chilli. Mix well.
  • Add the fried wings, sauté for a minute.
  • Spread some crushed black pepper, mix thoroughly, and serve.
